About the plantA small evergreen tree of about 4.5 meters, with stiff,  spined, smooth oval leaves, that range in shades of green. Small white flowers, produce the dark green fruits (about half the size of lemons). This is the desired color for harvesting, rather than the yellow/green when ripe.

Lime oil is available as a cold pressed essential oil or steam distilled. Distilled Lime Oil has more of a sweet candy flavour than the cold pressed. Lime has been mainly used for its juice, and the high levels of Vitamin C present in the fruit.

The cold pressing method is by using the small whole unripe fruits of the West Indian Lime. This method is desired in perfumery work, for its persistence and fresh citrus notes.
